Ingredients

  • Red blood orange 1 piece
  • Mandarin orange 1 piece
  • Iceberg lettuce 5 crispy leaves
  • Cucumber 1 piece (washed and unpeeled)
  • Chickpeas ½ cup
  • Pomegranate ¼ cup arils
  • Fresh mint or parsley 1 handful

Vinaigrette

  • Orange juice 2 tbsp
  • Lime juice 1 tbsp
  • Honey 1 tbsp
  • Dijon mustard 1 tbsp
  • Minced Garlic 1 piece
  • Extra virgin olive oil 1/3 cup
  • Salt and Pepper To taste

Method

  1. Peel, deseed and slice the oranges, chop the lettuce and cucumber. Add everything to a bowl along with pomegranate arils.
  2. Rinse, boil and strain the chickpeas and add them to the salad bowl.
  3. For the vinaigrette, squeeze out orange juice and lime juice in a small bowl. Add honey, Dijon mustard, minced garlic and extra virgin olive oil to the mixture and whisk it all together to achieve a smooth texture. Add salt and pepper to taste and top the salad with a handful of mint or parsley. Enjoy!
