Ingredients

  • Plain flour 3 cups
  • Baking powder ½ tsp
  • Baking soda ½ tsp
  • Salt 1 tsp
  • Sugar (grinded) 2 cups
  • Butter (embargo) 200 gms
  • Vanilla essence 1 tsp
  • Orange Juice ¼ cup
  • Eggs 5 units
  • Buttermilk ¾ cup
  • Orange peel 50 gms
  • Fruiti-O Orange Nectar ½ cup
  • Shangrila Lemon Juice 1 cup
  • Sugar ½ cup
  • Icing sugar 2 cups
  • Orange Juice 2-4 tbs
  • Cinnamon powder 1 tsp

Method

  1. Preheat the oven at 180°C. Grease and line the bottom of two, 8 or 9 inch loaf pans with butter paper.
  2. In a bowl, mix plain flour, baking powder, baking soda, salt, and orange zest. Mix orange Juice and buttermilk together and in a separate bowl, add cream, butter, sugar, and vanilla essence. Now add eggs one at a time.
  3. Add flour and buttermilk mixture and mix well. Divide the batter between the 2 loaf pans and bake for 45-60 minutes. When cakes turn golden in colour, insert a fork and check, it should come out clean.
  4. Mix orange juice, sugar, lemon juice, cinnamon powder and stir gently till sugar dissolves. Remove from the oven and bring it to room temperature.
  5. When the cakes are done, take it out and brush the syrup generously on top of the cakes. When the cakes are completely cool, remove from the loaf pans. Prepare the glaze by adding icing sugar and 2 tbsp orange juice. Add a little amount of orange juice to have a thick pourable consistency. Glaze is ready to pour on the cakes. Let the glaze set and dry. Serve it cool.
