Ingredients

    Masala Spice Mix:
  • 2 Tbsp Garam Masala
  • 1/2 Tsp Cumin
  • 1/2 Tsp Turmeric
  • 1/2 Tsp Smoked Paprika
  • 1/4 Tsp Cayenne
  • 1/2 Tsp Salt
  • Skillet Ingredients:
  • Freshly Cayenne Pepper
  • 1 Yellow Onion
  • 3 Cloves Minced Garlic
  • 1/2 Tbsp Grated Fresh Ginger
  • 2 Tbsp Olive Oil
  • 1.5 Cup Frozen Cauliflower Florets
  • 1.8 Cup Canned Chickpeas, Drained
  • 1.8 Cup Tomato Puree
  • 1/4 Cup Water
  • 1/3 Cup Heavy Cream
  • Salt To Taste

Method

  1. In a small bowl, create the masala spice mix by combining garam masala, cumin, turmeric, smoked paprika, cayenne, salt, and pepper.
  2. Dice the onion, mince the garlic, and grate the ginger. Sauté all three in a skillet with olive oil until the onions are soft and translucent. Add the spice mix and sauté for an additional minute.
  3. Introduce frozen cauliflower florets to the skillet, ensuring they are coated in the aromatic spices. Sauté for approximately 5 minutes or until the cauliflower is thawed.
  4. Add drained chickpeas, tomato puree, and 1/4 cup water to the skillet. Allow the mixture to simmer for 15 minutes, stirring occasionally. If it becomes too dry, add a bit more water.
  5. After simmering, turn off the heat and stir in the heavy cream. Taste the masala and add salt as needed. Serve this delectable dish in a bowl over rice or with a side of bread for a delightful, low-cost feast.
