In winters, soups are most welcomed and desired. Give your body a burst of nutrients to replenish your water level and feel energized and full. Hot & Sour soup needs no introduction when it comes to its taste and flavour. Follow this easy recipe and make yourself a hot and sour soup this winter season and get through the day without feeling dizzy and dehydrated. This recipe has just the right amount of fats, proteins and carbohydrates to leave you feeling full and active throughout the day.
Ingredients
- Chicken stock 4 cups
- Chicken boiled and shredded 1 cup
- Sliced carrots ¾ cup
- Bell Pepper ¾ cup
- Cabbage ½ cup
- Spring onions 6 stalks
- Regular Soy Sauce 2 tbsp
- Dark Soy Sauce 1 tbsp
- Siracha Sauce 3 ½ tbsp
- Ketchup 4 tbsp
- White Vinegar 2 tbsp
- Garlic Chilli Sauce 1 tbsp
- White Pepper 1 tbsp
- Brown Sugar 2 tbsp
- Sesame Oil 2 tbsp
- Salt (as per taste)
- Whisked Egg 1
- Corn Flour 4 tbsp
Method
- Preparing the stock : If you have ready made chicken stock, you can miss this step. But if you prefer making it at home, add vegetables and herbs in it too for added nutrients.
- Preparing the soup : In a saucepan, on medium heat, bring the chicken stock to a boil and let it simmer. Add regular Soy Sauce, Dark Soy Sauce, Siracha Sauce, Vinegar, Garlic Chilli Sauce, white pepper, brown sugar, and sesame oil. Add salt as per your taste. Usually, the chicken stock coupled with soy sauces makes the soup salty therefore, practice caution. Add boiled and shredded chicken, carrots, bell peppers, cabbage, and the white portion of the spring onions.
- Finalising the soup : Bring the concoction to a boil and pour the corn flour mixture gradually while stirring the soup. Be sure to add only as much to achieve the desired consistency of your soup. Lower the heat, add the whisked egg, and let the soup sit in the saucepan for one minute. Stir and let the soup simmer for another 2-3 minutes. Switch off the heat and add chopped spring onion stalks.
Tip : Shiitake mushrooms, tofu and bamboo shoots are major ingredients of soup and are commonly available at all shops.
