Some know it as Peri Bites, some remember it as Chilos, and some call it Crispy Chilli bites. It may have many names, but its taste and method of making remain the same. Crispy Chilli Bites are one of the most delicious tea-time snacks you can make with very few ingredients. They are easy to eat, rich in flavour, and go well with tea or coffee. They can be served as a starter meal or made for Iftaar. Either way, they pack a world of flavour in them. Here is how you can make them:

Ingredients
- Green chillies 25 units (Preferably 3 inches long, deseeded)
- Mayonnaise (unflavored) ½ cup
- Shangrila BBQ Sauce 4 tbsp
- Shangrila Chilli Sauce 2 tbsp
- Cheddar cheese (grated) ½ cup
- Chicken breast (boneless) ½ kg
- Salt (lower than taste)
- Oil for frying
- Plain flour for coating
- Egg (whisked) for coating
- Breadcrumbs as required
Method
- Cut chicken breast into strips, and season it slightly with salt. Heat a griddle, pour a few tbsp of oil, and sauté chicken on high flame. Turn heat to medium, add 1-2 tbsp of water, cover, and cook till done. Remove and bring to room temperature.
- For the filling, mix mayonnaise, BBQ Sauce, Chilli Sauce, and grated cheddar cheese. Mix it all well, fill it in a piping bag, and set it aside.
- Wash chillies and pat dry them using a kitchen cloth. Make a slit but do not cut to the end. Using the back of a spoon, carefully remove all the seeds. Pipe the mayonnaise, and cheese filling and fit chicken strips in it. Press the slit area, and clean excess filling using the tip of your finger. Coat in plain flour, whisked egg and then in breadcrumbs. Repeat the coating procedure. Fill all the chillies in the same way.
- Keep the filled-up chillies in the fridge for 1 hour. Then heat oil and deep fry on moderate heat till the chillies turn golden in colour. Serve hot.
