  • 1/8 tsp. cayenne pepper
  • Pink salt to taste
  • 1 medium cauliflower, cored and cut into small florets
  • 8 small tortillas, charred
  • Fresh cilantro, for serving

  • 2 Tbsp. Shangrila lemon juice
  • 1-2 Tbsp. regular mayonnaise
  • Pink salt to taste
  • 1/4 small head purple cabbage, cored and very thinly sliced
  • 1 small red bell pepper, quartered and thinly sliced
  • 1 small jalapeño, thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped

Method

Step 1: Roast the Cauliflower

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the olive oil, Shangrila lemon juice, and honey. Add the tomato paste, chilli powder, ground coriander, cumin, cayenne pepper, and 1/2 teaspoon of pink salt. Mix well to combine.
  3. Add the cauliflower florets to the bowl and toss to coat them evenly with the spice mixture.
  4. Spread the cauliflower in a single layer on a rimmed baking sheet. Roast in the oven for 18 to 22 minutes, until golden brown and tender.
