No more travelling all the way to Thailand to have their famous dish Gai Yang or Thai Grilled Chicken. One of the most flavorful grilled chicken recipes you’ll ever have, Gai Yang is best served hot off the grill from a street vendor. However, you can still have the same experience by following this recipe at home. All you need is some fresh lemon grass and a few sauces.

Ingredients

  • Chicken (leg cut) 4 pieces
  • Soy Sauce 2 tbsp
  • Garlic paste 1 tsp
  • Lemon Juice 3 tbs
  • Black pepper (crushed) ½ tsp
  • Hot Sriracha Sauce 8 tbs
  • Thai Sweet Chilli Sauce 2 tbsp
  • Lemon grass
  • Coriander
  • Yellow food colouring 1 pinch
  • Corn flour 2 tbsp
  • Oil 1 tbsp
  • Salt (as per taste)

Method

  1. Add lemon grass, coriander, and garlic to a mortar and pestle, and pound it until it turns into a fine paste. Then mix soy sauce, lemon juice, black pepper, yellow food colouring and salt together with the paste and mix it until it’s well combined. Then make slight incisions in chicken leg pieces and spread the prepared mixture over the chicken. Coat every piece thoroughly by rubbing the paste all over it. Cover it and leave it to marinate overnight in a refrigerator.
  2. Mix sugar and water until it becomes a syrup. Add all the sauces and tamarind paste to prevent the sauce from being runny. Set aside.
  3. Coat the chicken with corn flour and set aside. Take a griddle and place it on medium flame. Add some oil in it and place the chicken onto it. Season it with Hot Sriracha Sauce and Thai Sweet Chilli Sauce to serve.

Tip: Be cautious of the marination time.
