Ingredients
- Chicken fillet ½ kg
- Onion (chopped) ½ cup
- Lemon Juice 2 tbsp
- Oil ½ cup
- Salt & pepper 1 tbsp
- Flour ½ cup
- Eggs 2 units
- Milk 2 tbs
- Bread crumbs 1 ½ cup
- Extra oil 1 tbsp
- Butter 2+2 ounce
- Garlic (crushed) 1 tbsp
- Parsley (finely chopped) 1 tbsp
- Hot Habanero sauce 2 tbsp
- Mango Chilli Sauce 2 tbsp
- Mayonnaise 4 tbs
- Thai Sweet Chilli Sauce 4 tbsp
- Vinegar 1 tbsp
- Tomato Ketchup 2 tbsp
Method
- Before you prepare the chicken for marination, it’s essential to pound it and make it ready for tenderisation. Place your chicken fillet in plastic wrap and pound it with a mallet or a skillet. Reduce the thickness to about ¼-inch.
- Marinate chicken with chopped onion, lemon juice, oil, salt and pepper, and mix well. Also, add in hot habanero sauce and mango chilli sauce, and leave it to marinate for 1 hour.
- Remove fillet from marination, coat in flour, dip into egg and milk mixture, and then into bread crumbs pressing crumbs firmly. Heat extra oil and butter in a large frying pan, and add the chicken fillet. Cook gently on both sides until golden.
- Mix mayonnaise, Thai sweet chilli sauce, vinegar and tomato ketchup to make the cocktail sauce.
- Melt extra butter in a separate pan, add crushed garlic, and cook until butter turns light golden. Then add parsley, pour butter over the chicken fillet, and serve immediately with cocktail sauce and fries.
