Method

  1. Prepare the Cream Mixture: In a saucepan, combine 600ml thickened cream, 315g caster sugar, and a pinch of salt. Whisk over low heat until the sugar dissolves, taking care not to let the mixture boil. Stir in 2 tsp of coconut essence.
  2. Chill the Mixture: Transfer the cream mixture to a large bowl and set it aside, stirring occasionally, until cooled slightly. Place the bowl in the fridge for 3 hours or until thoroughly chilled.
  3. Freeze the Cream Mixture: Use electric beaters to whip the cream mixture until soft peaks form. Transfer the whipped mixture to an airtight, freezer-proof container, seal, and place it in the freezer for 5 hours or until frozen.
