Ingredients
- Flour 5 cups
- Baking soda 1 tsp
- Salt ½ tsp
- Cloves (ground) ½ tsp
- Ginger (ground) 2 tsp
- Cinnamon (ground) 1 tbs
- Caster sugar 2 cups
- Butter 1 cup
- Eggs 2 units
- Fruiti-O Apple Nectar 2 cups
- Raisins 1 cup
- Walnuts 1 cup
- Icing sugar 2 cups
- Apple Nectar ¼ cup
Method
- Mix flour, baking soda, salt, cloves, ginger, and cinnamon. In a separate bowl, beat butter and sugar until it’s light and fluffy. Beat the eggs one at a time. Alternately, add the flour mixture and Fruiti-O Apple Nectar. Fold in the raisins and walnuts and let it set for a bit.
- Once the batter is set for baking, pour it into a greased and lined tin and place it in the oven at 180°C for about 1 hour or earlier. Test the readiness of the cake by inserting a toothpick in the centre of the cake. If it comes out clean, the cake is ready. Cool the pan for about 15 minutes before carefully loosening and inverting it onto a serving platter.
- Cool the cake completely before preparing the glaze. To make the glaze, stir together the icing sugar and Fruiti-O Apple Nectar until a thick, yet pourable consistency is formed. Add more sugar or Fruiti-O Apple Nectar as it is necessary. Pour over the cake and serve.
